&lt;ul&gt;&lt;li class="ingredient"&gt;1 recipe Gluten Free Pie Dough - Enough for a 2- crust pie (see recipe link below)&lt;/li&gt;
&lt;li class="ingredient"&gt;7 cups, peeled Grannie Smith apples, sliced 1/4&amp;#8221; thick- about 2&amp;#160;1/2 pounds&lt;/li&gt;
&lt;li class="ingredient"&gt;3/4 - 1 cup sugar (if using a tart variety of apple, use more sugar)&lt;/li&gt;
&lt;li class="ingredient"&gt;2 tablespoons sweet rice flour OR tapioca flour&lt;/li&gt;
&lt;li class="ingredient"&gt;1 teaspoon cinnamon&lt;/li&gt;
&lt;li class="ingredient"&gt;1/8 teaspoon nutmeg&lt;/li&gt;
&lt;li class="ingredient"&gt;1/4 teaspoon salt&lt;/li&gt;
&lt;li class="ingredient"&gt;3 tablespoons cubed butter&lt;/li&gt;
&lt;/ul&gt;&lt;h3 id="rP"&gt;Preparation:&lt;/h3&gt;
&lt;div class="instructions"&gt;Preheat oven to 425°&lt;ol&gt;&lt;li&gt;Prepare one recipe of &lt;a href="http://glutenfreecooking.about.com/od/dessertsandsweets/r/gftartdough.htm"&gt;Gluten Free Pie and Tart Dough&lt;/a&gt;. This recipe yields enough dough for a 2-crust pie. Roll out half of dough according to recipe instructions and place in a 9-inch pie plate.&lt;/li&gt;
&lt;li&gt;Combine sugar, amaranth, arrowroot OR cornstarch, cinnamon, nutmeg and salt in a large bowl and use a whisk to thoroughly blend ingredients.&lt;/li&gt;
&lt;li&gt;Add sliced apples and gently coat apples with sugar mixture.&lt;/li&gt;
&lt;li&gt;Pour apples into dough-lined pie plate and distribute them evenly.&lt;/li&gt;
&lt;li&gt;Dot the top of the apples with cubed butter.&lt;/li&gt;
&lt;li&gt;Place top crust over the apples. Press edges to seal dough and use your favorite method to flute the edges (pressed with fork tines, etc.). Cut or poke several small vents in the top of the pie crust.&lt;/li&gt;
&lt;li&gt;Bake for 50-60 minutes, until top is golden brown and apples are tender.&lt;/li&gt;
&lt;li&gt;Check frequently. If edges brown too quickly, place a strip of foil around the edge to prevent burning.&lt;/li&gt;

&lt;p&gt;&lt;span class="summary"&gt;I&amp;#8217;m finally happy with a gluten-free pizza crust. It&amp;#8217;s the best gluten-free dairy-free pizza crust I&amp;#8217;ve eaten. These particular flours bring superior flavor and a perfect pizza crust texture. Slightly golden crisp at the edge, with a tender, flexible middle. Not too thick and not too thin. Add the oil, eggs and vinegar.&lt;br/&gt;&lt;br/&gt;&lt;span class="instructions"&gt;Beat the dough until smooth and sticky. The pizza dough should be creamy smooth and not too thick- it&amp;#8217;s not sturdy like typical bread dough. It almost borders on batter.&lt;/span&gt;&lt;br/&gt;&lt;br/&gt; Using a silicone spatula divide the dough in half. Scoop each half onto the center of a prepared pizza pan. Using clean, wet hands press down lightly and flatten the dough to create a thin, even pizza shell, with slightly raised edges. You&amp;#8217;ll have to rinse your hands more than once to do this. Take your time to smooth out the dough with wet palms. Have patience, Bubela. You will be rewarded with a lovely crust. Promise.&lt;br/&gt;&lt;br/&gt; Set the pizza shells in a warm cozy spot to rest and rise a bit- about 15 minutes.&lt;br/&gt;&lt;br/&gt; Preheat the oven to 400ºF.&lt;br/&gt;&lt;br/&gt; When the oven is hot, place the two pizza pans side by side on the center rack (if your oven is too small to accommodate both pans on one rack, you&amp;#8217;ll need to use two racks; rotate the pans half way through baking time to avoid overcooking on the lower rack).&lt;br/&gt;&lt;br/&gt; Bake for ten minutes till golden.&lt;br/&gt;&lt;br/&gt; Remove from the oven. Preheat the broiler.&lt;br/&gt;&lt;br/&gt; Brush the pizza shell with extra virgin olive oil. Season with sea salt and fresh garlic. Sprinkle with Italian herbs.&lt;br/&gt;&lt;br/&gt; Top with your choice of fresh vegetables and herbs.&lt;br/&gt;&lt;br/&gt; I used:&lt;br/&gt;&lt;br/&gt; Fresh baby spinach leaves and basil &lt;br/&gt; Roasted eggplant slices&lt;br/&gt; Sliced fresh tomatoes&lt;br/&gt; Vegan &amp;#8220;mozzarella&amp;#8221; cheese&lt;br/&gt; Italian herbs (dried oregano, marjoram, parsley, rosemary, thyme) &lt;br/&gt; Drizzle of extra virgin olive oil all over the top &lt;br/&gt;&lt;br/&gt; Broil briefly to melt the cheese, 4-5 minutes. &lt;li class="ingredient"&gt;1 teaspoon baking powder&lt;/li&gt;
&lt;li class="ingredient"&gt;2 teaspoons ground cinnamon&lt;/li&gt;
&lt;li class="ingredient"&gt;1 cup (200g) granulated sugar&lt;/li&gt;
&lt;li class="ingredient"&gt;1 cup (218g) packed light brown sugar&lt;/li&gt;
&lt;li class="ingredient"&gt;2&amp;#160;1/2 cups grated zucchini&lt;/li&gt;
&lt;li class="ingredient"&gt;3 extra-large eggs at room temperature, beaten&lt;/li&gt;
&lt;li class="ingredient"&gt;1 ripe banana, peeled and mashed&lt;/li&gt;
&lt;li class="ingredient"&gt;1/2 cup (112g) vegetable oil&lt;/li&gt;
&lt;li class="ingredient"&gt;2 teaspoons pure vanilla extract&lt;/li&gt;
&lt;li class="ingredient"&gt;8 ounces semi-sweet chocolate chips&lt;/li&gt;
&lt;li class="ingredient"&gt;1 tablespoon cornstarch&lt;/li&gt;
&lt;/ul&gt;&lt;/div&gt;

&lt;div class="ERInstructionsHeader"&gt;Instructions&lt;/div&gt;
&lt;div class="instructions"&gt;&lt;ol&gt;&lt;li class="instruction"&gt;Preheat your oven to 325 degrees F. Grease 2 standard loaf pans and set them aside.&lt;/li&gt;
&lt;li class="instruction"&gt;In a large bowl, place flour, xanthan gum, salt, baking soda, baking powder, cinnamon, granulated sugar and light brown sugar, and whisk to combine (working out any lumps in the brown sugar). Set aside the dry ingredients.&lt;/li&gt;
&lt;li class="instruction"&gt;In a separate small bowl, place the zucchini, eggs, banana, oil and vanilla, and mix to combine well.&lt;/li&gt;
&lt;li class="instruction"&gt;Create a well in the center of the bowl of dry ingredients, and pour in the wet ingredients. Mix to combine. The batter will be very wet. In a separate small bowl, toss the chocolate chips with the cornstarch. Pour the chocolate chips and cornstarch into the batter, and mix until the chips are evenly distributed throughout the batter. Divide the batter evenly between the two prepared loaf pans, and smooth the tops with a wet spatula.&lt;/li&gt;
&lt;li class="instruction"&gt;Place the loaf pans in the center of the preheated oven, and bake, rotating once, until the tops are golden brown and a toothpick inserted in the center of each loaf comes out clean (about 50 minutes).&lt;/li&gt;
&lt;li class="instruction"&gt;Remove from the oven and allow to cool for at least 30 minutes in the loaf pans. Remove from the pans and transfer to a wire rack to cool completely.&lt;/li&gt;
&lt;li class="instruction"&gt;Slice and serve. Leftovers should be wrapped tightly in freezer-safe wrap and frozen until ready to use.&lt;/li&gt;

&lt;li class="instruction"&gt;Combine wet ingredients besides zucchini in a stand mixer and beat on medium for about 2 minutes. Alternatively, combine in a large bowl and whisk together vigorously.&lt;/li&gt;
&lt;li class="instruction"&gt;Add zucchini and mix until combined.&lt;/li&gt;
&lt;li class="instruction"&gt;Pour dry ingredients into wet and mix until incorporated.&lt;/li&gt;
&lt;li class="instruction"&gt;Pour batter into loaf pans.&lt;/li&gt;
&lt;li class="instruction"&gt;Bake for 32-35 minutes until a toothpick comes out clean.&lt;/li&gt;
&lt;li class="instruction"&gt;Remove from oven and let cool for 5 minutes.&lt;/li&gt;
